Excuse me for writing this, but to me, it doesn’t seem proper to call food taken from a simcha a doggy bag. A more kavod way of describing would probably be better.

He explains why it’s not stealing, but not why people davka do it, and davka at a bris. As I understand it the reason is that it’s a big zechus to participate in the seudah of a bris, and since not everyone is able to come, you take home some food for them and when they eat it they get the credit as if they had attended.
